One variety is orange, and is known as the golden beet. A descendant of a sea vegetable, orange beets are a nutrient-rich food low in calories and high in fiber and potassium. The difference between the red and the orange beet is the pigment compound. Red beets are rich in betalain pigment while orange beets are rich in b-xanthin pigment. Though their pigment color differs, their nutritional benefits are the same. You'll gain a number of health benefits if you include the orange beet in your diet

We love this creamy kale salad with lemon-tahini dressing. Lacinato Kale Salad with Lemon-Tahini Dressing kale salad For the salad:
    1 bunch lacinato kale, stems removed and chopped     1 can chickpeas, drained and rinsed     1 avocado, sliced     ¼ cup chopped red onion     ¼ cup chopped parsley
For the dressing:
    ¼ cup tahini     ¼ cup lemon juice     1 garlic clove, minced     salt and pepper to taste

Like other vegetables of the brassica family (cabbage, broccoli, brussels sprouts etc), radishes contain two natural compounds, sulforaphane and indole-3, which in animal and lab studies have shown an anti-cancer action. It is thought that these antioxidant substances may slow or stop the growth of several different types of cancer, possibly by prompting the body to make higher levels of detoxifying enzymes. Since we generally eat radishes raw, we benefit from this nutritional benefit as these compounds are depleted by cooking.
