Traditionally made cream cheese (“Kajmak”) made by culturing beta carotene rich Jersey cow cream and then straining the cultured cream in cheese cloth sacks. Jersey milk is 20% higher in calcium and richer in micro nutrients; minerals and vitamins. Jersey cows produce A2 proteinmilk which some find easier to digest.
